- 1 lb. dried black-eyed peas
- 1 (4 1/2 lb.) ham
- 1 medium onion
- 2 tsp. salt
- 1/4 tsp. pepper
- 3 c. water
- 2 c. uncooked rice
Directions

1Soak peas overnight in water.

2Drain.

3Combine all ingredients, except rice, in 6 quart pressure cooker.

4Secure lid. Cook at 15 pounds of pressure for 35 minutes.

5Remove pressure, then remove lid.

6Place ham on carving board, trim fat; slice.
