Ham Stuffed Shells Recipe

  • 15 stuffing shells
  • 2 c. ham, cooked and diced
  • 1 (10 ounce.) pkg. frzn minced spinach, cooked and liquid removed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tbsp. butter
  • 4 tbsp. flour
  • 2 c. lowfat milk
  • 2 1/2 c. shredded Swiss cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

    Cook shells according to package directions.

    Drain and set aside.

    Cook spinach according to package directions.

    Combine ham, spinach, salt and pepper.

    Set aside.

    In saucepan, heat butter.

    Add in flour.

    Cook for 2 min.

    Add in lowfat milk and bring to boil over moderate heat, stirring constantly.

    Remove from heat.

    Add in 1 1/2 c. Swiss cheese, salt and pepper.

    Stir sauce till smooth.

    Add in 1/4 c. sauce to ham mix.

    Stuff shells with ham mix.

    Spoon 1/2 c. sauce on bottom of 11 3/4 x 7 1/2 x 3/4 inch pan.

    Arrange shells over sauce.

    Cover shells with remaining sauce.

    Sprinkle remaining 1 c. Swiss cheese over the shells.

    Bake at 350 degrees for 20 to 25 min or possibly till cheese starts to brown.
