Handmade Tortillas

- 2 cup Maseca Especial
- 1 packages chicken bones for stock
- 1 tsp kosher salt
Directions

1Start of with a medium pot full of water and boil the bones for broth.

2(You can always use short cuts for my recepes).

3When done use colander to avoid any chunks of meat going into your maseca.

4Now that your broth is ready let it cool down a bit.

5After it's cooled down pour the maseca into the mixing bowl along with 2 cups of broth and the salt.

6Mix.

7Add broth as you go.

8(The tortilla dough should be firm but soft enough to mold)

9As the tortilla dough sits, heat your iron griddle on the stove on medium high heat.

10Get out your handy dandy tortilla presser and two sheets of plastic.

11NOTE: If you don't have a tortilla presser then use the back of a flat dinner plate.

12If you don't have plastic sheets then use a grocery bag and cut into two squares.

13(Iron griddles, skillets, pans etc.

14is the ideal cooking ware for the best tasting tortillas but a non-stick griddle is fine too)*

15Now that you're ready to go, grab some of the tortilla dough and work it in your hands into a ball (the smaller the ball the smaller the tortilla...the bigger the ball the bigger the tortilla so I leave this up to you).

16Lay the first plastic sheet on the tortilla presser and place the ball in the center, now put the second plastic sheet on top of the ball and close the presser and press down.

17This next step is the tricky part for beginners.

18Lift the tortilla while still inside the two plastic sheets.

19Lay it flat on your hand (I use my left first) now peel the top sheet then place the exposed side of the tortilla on your other hand and peel the second plastic sheet away... gently but surely lay the tortilla on the griddle.

20The tortilla is ready to be flipped when the dough on the uncooked side changes color from a pale white to a yellowish tone.

21Wait about 30 sec.

22and then flip it again but this time press down on it with your spatula.

23It should rise on its own and that means it's ready.

24If it doesn't rise then yeah, it does suck but trust me it's ready lol

25Repeat this process until you're done with the dough.

26Keep your tortillas nice and hot by covering them in paper towls and aluminum foil.
