Ingredients
- 1 pound pork shoulder smoked, or smoked brisket
- 1 yellow onion large, Chopped
- 4 cloves garlic crushed
- 8 Hatch Green Chiles roasted, peeled, seeded, chopped
- 15 ounces diced tomatoes
- 2 russet potatoes large, or 4 small peeled, cut into 1/2 inch cubes
- 16 ounces beef stock
- 1/2 teaspoon fresh ground black pepper
- 4 tablespoons all purpose flour for thickening
- 1/4 cup dry sherry
Directions

1Add meat (if not using meat, add 1 tsp liquid smoke), and rest of the ingredients to a large braiser or stock pot. Bring to a boil.

2Reduce heat to low, stir in flour, cover the pot, and let simmer for 30 minutes.
