Hatch Green Chile Stew

Ingredients

  • 1 pound pork shoulder smoked, or smoked brisket
  • 1 yellow onion large, Chopped
  • 4 cloves garlic crushed
  • 8 Hatch Green Chiles roasted, peeled, seeded, chopped
  • 15 ounces diced tomatoes
  • 2 russet potatoes large, or 4 small peeled, cut into 1/2 inch cubes
  • 16 ounces beef stock
  • 1/2 teaspoon fresh ground black pepper
  • 4 tablespoons all purpose flour for thickening
  • 1/4 cup dry sherry

Directions

    Add meat (if not using meat, add 1 tsp liquid smoke), and rest of the ingredients to a large braiser or stock pot. Bring to a boil.

    Reduce heat to low, stir in flour, cover the pot, and let simmer for 30 minutes.
