- 2 c. milk
- 1 c. sugar
- 1 pt. whipping cream
- 1 can shredded coconut
- 2 Tbsp. unflavored gelatin
- 1/2 c. water
- 1/2 tsp. vanilla
Directions

1Stir sugar into milk; heat until sugar dissolves.

2Soak gelatin in water.

3Dissolve in hot milk.

4Cool, then chill until mixture starts to thicken.

5Whip cream until stiff; add vanilla. Fold cream into custard.

6Sprinkle a few spoonfuls of the coconut evenly around the bottom of a medium size ring mold.

7Add the rest of the coconut to the creamed mixture, folding it in gently.

8Put into refrigerator overnight, covered with plastic wrap or foil.
