  • 5 lb. chuck roast
  • 3 Tbsp. oil
  • 4 onions, quartered
  • 1 c. diced celery
  • 4 chopped carrots
  • 12 oz. pineapple juice
  • 1/4 tsp. ground ginger
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. sugar
  • 3 Tbsp. soy sauce
  • 1 (20 oz.) can pineapple chunks, drained
  • 1/3 c. water
  • 1/4 c. flour

    roast in 12-inch Dutch oven in oil.

    Remove meat and brown vegetables.

    Return meat to Dutch oven.

    Add pineapple juice,

    ginger, salt, pepper, sugar and soy sauce. Cover Dutch oven

    simmer for 2 1/2 hours. Add pineapple chunks and cook 20 minutes more.
