- 1 (6 oz.) pkg. long grain and wild rice mix
- 3 large boneless, skinless chicken breasts, cut in half
- 4 Tbsp. butter or margarine
- 1 can cream of chicken soup
- 3/4 c. Sauterne
- 1/2 c. celery, sliced thin
- 1 (3 oz.) can mushrooms (broil or saute fresh mushrooms)
- 2 Tbsp. chopped pimento
Directions

1Prepare rice according to package. Meanwhile, lightly season with salt and pepper the chicken breasts. Brown them in the butter in a large skillet.

2Spoon rice into 1 1/2-quart casserole. Arrange chicken on the rice.
