  • 1 (6 oz.) pkg. long grain and wild rice mix
  • 3 large boneless, skinless chicken breasts, cut in half
  • 4 Tbsp. butter or margarine
  • 1 can cream of chicken soup
  • 3/4 c. Sauterne
  • 1/2 c. celery, sliced thin
  • 1 (3 oz.) can mushrooms (broil or saute fresh mushrooms)
  • 2 Tbsp. chopped pimento

Directions

    Prepare rice according to package. Meanwhile, lightly season with salt and pepper the chicken breasts. Brown them in the butter in a large skillet.

    Spoon rice into 1 1/2-quart casserole. Arrange chicken on the rice.
