- 1/4 cup hoisin sauce
- 1/4 cup apricot jam
- 4 boneless skinless chicken breast halves (right from freezer, no need to thaw)
- 1/4 cup minced fresh cilantro
- 1/4 cup minced green onion
- 1 tablespoon lemon, rind of, minced
Directions

1Mix hoisin sauce and jam.

2Place chicken in a single layer in a 9- by 13-inch pan.

3Bake in a 400 degree F oven for 15 minutes.

4Remove pan from oven; spread hoisin mixture onto chicken.

5Return pan to oven and continue baking until meat is no longer pink in center of thickest part (cut to test), about 10 to 15 more minutes.

6Baste once with juices.

7Meanwhile, mix cilantro, onions and lemon peel.

8Transfer chicken breasts to serving platter.

9Sprinkle cilantro mixture over and around chicken.
