  • 1 c. butter
  • 2 c. sugar
  • 6 eggs
  • 2 c. flour
  • 1 tsp. vanilla
  • 2 Tbsp. flour
  • 1/4 tsp. lemon rind
  • 2 Tbsp. lemon juice
  • 1/2 lb. or 1 c. candied pineapple
  • 1/4 lb. or 1/2 c. candied red cherries
  • 1/4 lb. or 1/2 c. candied green cherries
  • 1 c. pecans
  • 1/4 c. plus 2 Tbsp. sugar

Directions

    Cream butter, sugar and eggs, 1 at a time, then add flour. Stir in vanilla.

    Combine fruits and nuts in 2 tablespoons flour. Stir into batter.

    Pour batter in a 10-inch tube or Bundt pan, sprayed with Pam.

    Cook at 325° for 1 1/2 hours.
