- 1/2 lb. black-eyed peas, cooked
- 1/2 lb. sausage
- 1/2 c. chopped onion
- 2 1/2 c. cooked rice
- 1 jar cherry peppers
Directions

1Drain and discard liquid from peas.

2Saute sausage until done. Add onion; saute and drain.

3Add to drained black-eyed peas and rice.

4Season with Tabasco, salt and pepper.

5Add cherry peppers. Serve as a main dish or as a side dish.

6Makes 6 (1-cup) servings.
