  • 4 medium size red potatoes, peeled and cubed
  • 1 (8 oz.) carton sour cream
  • 2 Tbsp. chopped green onion
  • 2 to 3 tsp. mustard
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • paprika

Directions

    Cook potatoes in boiling salted water for about 20 minutes. Drain well and mash.

    Combine potatoes and remaining ingredients except paprika, mixing well.

    Spoon mixture into a lightly greased 1-quart casserole; sprinkle with paprika and cover and bake at 350° for 15 minutes.
