- 4 medium size red potatoes, peeled and cubed
- 1 (8 oz.) carton sour cream
- 2 Tbsp. chopped green onion
- 2 to 3 tsp. mustard
- 1/2 tsp. salt
- 1/2 tsp. pepper
- paprika
Directions

1Cook potatoes in boiling salted water for about 20 minutes. Drain well and mash.

2Combine potatoes and remaining ingredients except paprika, mixing well.

3Spoon mixture into a lightly greased 1-quart casserole; sprinkle with paprika and cover and bake at 350° for 15 minutes.
