Hungarian Potatoes

  • 8 medium White Rose potatoes, cooked
  • 10 hard-boiled eggs
  • 1/4 lb. butter
  • 1 pt. sour cream
  • bread crumbs or cracker meal
  • salt and pepper to taste

Directions

    Melt butter; stir in sour cream until smooth.

    Set aside. Butter bottom of a 13 1/2 x 8 3/4-inch baking dish.

    Slice 4 potatoes to form bottom layer.

    Salt and pepper to taste.

    Slice 5 eggs to form next layer.

    Cover with approximately half of the butter-sour cream mixture.

    Repeat layers with remaining potatoes, eggs and butter-sour cream mixture.

    Sprinkle top with bread crumbs or cracker meal.

    Bake in a 400° oven for 30 minutes or until dish is bubbling.
