- 2 gal. medium cucumbers
- 1 pt. salt
- 2 Tbsp. powdered alum
- 8 pt. white sugar
- 2 qt. vinegar
- pickling spices
Directions

1Cut cucumbers into lengthwise pieces.

2Dissolve salt in 1 gallon of boiling water and pour over cucumbers.

3Let stand one week.

4During that time, stir once every day.

5At the end of a week, drain off salt water and cover with clear boiling water.

6Let stand 24 hours.

7Drain off water.

8Dissolve alum in 1 gallon boiling water.

9Pour over cucumbers.

10Let stand 24 hours, then drain off. Heat vinegar and sugar very hot.

11Pour over cucumbers. Let stand 24 hours.

12Pour liquid off into pan.

13Reheat to boiling and pour back over cucumbers 4 times, waiting 24 hours between each time.

14On the fifth day, can pickles.

15Add pickling spices when vinegar is heated.
