- 1/4 cup scallions, spring or green onions
- 1 clove garlic minced
- 1/4 cup celery chopped
- 1 pound crawfish tails
- 1 x salt and black pepper
- 4 large eggs
- 2 cups milk
- 1 cup biscuit baking mix (bisquick)
- 1 cup swiss cheese
Directions

1In a small skillet saute onion, garlic and celery until clear.

2Add crawfish, salt and pepper.

3Simmer for 5 minutes.

4Grease pie plate.

5Add crawfish mixture.

6Beat eggs and milk for 1 minute.

7Add Bisquick, beat well.

8Sprinkle cheese on top of crawfish and pour Bisquick mixture into pie plate.

9Bake at 350F (180C).

10for 30 to 40 minutes.

11Cool for 5 minutes.
