  • 2 c. instant potatoes (enough for 6 servings)
  • 1 Tbsp. instant onion
  • 1 c. sour cream
  • 1 stick margarine
  • 1 small box frozen chopped spinach
  • grated cheese

Directions

    Boil water (amount according to directions on potato box). Add salt; add potatoes, margarine and sour cream.

    Cook spinach; when cool squeeze out all water.

    Add to potatoes.

    Add onion; mix well.

    Spread in baking dish; cover with cheese.

    Bake at 350° for about 30 minutes.
