- 2 1/2 c. corn meal
- 1 c. flour (all-purpose)
- 2 Tbsp. sugar
- 1 Tbsp. salt
- 4 tsp. baking powder
- 3 eggs
- 1 1/2 c. milk
- 1/2 c. cooking oil
- 1 (16 oz.) creamed corn
- 10 minced jalapeno peppers
- 2 c. grated sharp Cheddar cheese
- 1 c. finely chopped onions
Directions

1In a bowl, sift meal, flour, sugar, salt and baking powder together.

2In a separate bowl, beat 3 eggs lightly and stir in milk and oil.

3Add this liquid mixture to dry mixture and then combine all remaining ingredients, mixing well.

4Pour batter into two well-greased 9 x 11-inch baking pans.

5Bake at 425° for 30 minutes.
