  • 3 c. cornbread mix
  • 2 Tbsp. sugar
  • 3 eggs, beaten
  • 2 c. milk
  • 1/2 c. vegetable oil
  • 6 slices bacon, cooked and crumbled
  • 1 1/2 c. shredded sharp Cheddar cheese
  • 1 large onion, diced
  • 8 1/4 oz. can cream-style corn
  • 4 oz. jar pimiento, drained and diced
  • 2 Tbsp. jalapeno peppers, minced

Directions

    Combine cornbread mix and sugar in a large bowl.

    Add eggs, milk and oil.

    Mix well.

    Stir in remaining ingredients.

    Pour batter into a greased baking pan.

    Bake at 400° for 40 to 50 minutes or until done.

    This makes enough for a 13 x 9 x 2-inch pan.
