- 1 lb. smoked sausage
- 1 c. chopped celery
- 1 medium chopped onion
- 1 chopped bell pepper
- 1 Tbsp. shortening
- 1 c. raw rice
- 1 lb. crawfish tails
- 12 green onions with tops, chopped
- 2 c. water
- 1 tsp. Worcestershire
- 1/2 tsp. Tabasco
- 3 cloves minced garlic
- salt and pepper to taste
Directions

1Brown sausage in heavy pot then remove to drain on paper towel.

2Saute onion, celery, pepper and garlic until tender. Remove from pot.

3Add shortening and when it gets hot, add rice and brown lightly.

4Add crawfish and cook 3 minutes.

5Add sausage, vegetables and remaining ingredients.

6Cover and simmer 20 minutes.
