- 8 oz shrimp
- 6 oz cajun sausage
- 1 tbsp vegetable oil
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1 1/2 cup white rice
- 5 clove garlic
- 1 tbsp tomato paste
- 2 cup chicken broth
- 2 tbsp parsley
- 1/2 tsp old bay
Directions

1Season shrimp w/ salt & pepper.

2Set aside.

3Heat oil in 12in skillet over medium heat until shimmering.

4Add sausage, onion, bell pepper, Old Bay, and 1/2 tsp salt and cook until onion is softened (about 5 min).

5Stir in rice, garlic, and tomato paste and cook until fragrant (about 30s).

6Stir in broth and bring to simmer, scraping up browned bits.

7Cover and cook over medium-low heat until liquid is absorbed (about 5 min).

8Scatter shrimp over rice and continue to cook, covered, until rice is tender and shrimp are cooked through (about 5 min).

9Off heat, let rice sit for 2 min.

10Stir in parsley, season with salt and pepper to taste, and serve.
