Ingredients
- 1 lb. sausage
- 1 lb. chicken, skinned
- 1 lb. shrimp, shelled and drained
- 1/4 c. oil
- 5 or 6 carrots
- 4 or 5 sticks celery
- 2 bell peppers
- 2 cloves garlic
- 3 small onions
- 1 small bunch parsley
- 2 or 3 green onions
- 1 small can tomato paste
- 2 c. rice
- 2 1/2 c. chicken broth
Directions

1Cut up sausage, chicken, carrots, celery, green pepper, garlic, onion and fry in oil (don't fry green onions or parsley).

2You may have to do one at a time.

3Once fried, put in big casserole dish. (Don't do the shrimp yet.)

4Add the broth, rice and tomato paste and mix well.

5Bake at about 350° for about 40 minutes.

6The broth will be absorbed when done.

7If too dry, add some water.

8Take it out of the oven and add cayenne pepper, pepper and salt.

9Add recently fried shrimp.

10Cook 10 more minutes.

11It's done.

12Add the uncooked, cut up green onions and parsley.
