- 1 c. sugar
- 1/8 tsp. salt
- 1/3 c. flour
- 1 1/2 c. water
- 3 eggs, separated
- pat of margarine
- 2 tsp. lemon rind
- juice of 1 lemon
- 1 (9-inch) baked pie shell
Directions

1Grate fresh lemon rind to make 2 teaspoons, then squeeze and set aside.

2Separate eggs, reserve whites for meringue.

3Mix together sugar, salt, flour and lemon rind.

4Add water.

5Stir until smooth.

6Cook over medium heat until mixture starts to thicken.

7After slightly beating egg yolks.

8Put about 3 tablespoons of hot mixture in and mix.

9Add rest of egg yolk mixture and lemon juice to hot mixture and stir until it comes to a boil.

10Add butter and cool slightly.

11Pour into baked pie shell and top with meringue (seal all edges around pie).
