Japanese Fruit Pie

- 1/2 c. soft margarine
- 2 eggs
- 1 c. sugar
- 2 Tbsp. flour
- 1 tsp. vanilla
- 1/2 c. pecans
- 1 c. flaked coconut
- 1 c. plumped raisins
- 2 c. water
- 1 unbaked pie shell
Directions

1Beat the eggs, then combine the margarine, eggs, sugar, flour and vanilla.

2Mix well.

3Pour 2 cups boiling water over 1/2 to 3/4 cup raisins; let set 5 minutes and drain.

4Add the coarsely chopped pecans, coconut and drained raisins.

5Pour into unbaked pie shell and bake at 425° for 20 to 25 minutes.

6Let cool and serve with Cool Whip.
