Jelly Muffins

Ingredients

  • 1 3/4 c. flour
  • 1/2 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. Crisco shortening
  • 1 egg
  • 1 c. milk
  • 1/2 c. jelly (your choice, blueberry or seedless raspberry are my favorites)

Directions

    Mix flour, sugar, baking powder and salt.

    Cut in shortening. Stir in egg and milk just until ingredients are moistened.

    Fill 12 greased muffin cups (or use muffin cup liners) halfway.

    Put 1 teaspoon jelly in the center of each muffin.

    Then top with remaining muffin mixture until cups are 2/3 full.

    Bake 20 to 25 minutes at 400°.

    Let cool before eating, the jelly is hot.
