- 2 c. self-rising flour
- 2 c. granulated sugar
- 1 1/2 c. salad oil
- 4 eggs, beaten
- 1 tsp. vanilla
- 1 c. chopped nuts
- 1 c. coconut
- 3 c. grated carrots
Directions

1Mix together flour, sugar and salad oil in a large bowl (mixing by hand).

2Add the beaten eggs and mix well.

3Add all the other ingredients and mix well after each addition.

4Pour batter into a well-greased 10-inch tube pan and bake in a preheated oven at 350° for 1 1/2 hours.

5About 15 minutes before the cake is ready to come out of the oven, start putting together the Buttermilk Topping. Pour the topping over the cake as soon as you take it out of the oven.

6Allow the cake to stand in the pan for 3 to 4 hours.

7Remove from pan and serve.
