- 3 eggs
- 1 c. sugar
- 1/4 c. cold water
- 1 tsp. vanilla
- 1 c. sifted all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 pkg. lemon pudding and pie filling
- 1/2 c. sugar
- 1 egg
Directions

1Beat eggs until thick and lemon colored.

2Add sugar gradually, continuing to beat until light and fluffy.

3Add water and vanilla. Add sifted dry ingredients and blend until smooth.

4Pour into greased, waxed paper-lined 15-inch jellyroll pan.

5Bake at 375° for 12 to 15 minutes.

6Turn out immediately onto a tea towel sprinkled with powdered sugar.

7Remove waxed paper.

8Trim any rough edges.

9Roll cake up in cloth and place on rack to cool. Mix contents of package with sugar.

10Substitute 1 whole egg for 2 yolks as indicated and prepare as directed; cool.

11Unroll cake and spread on cooled filling.

12Roll up again and chill until ready to serve.
