- 3/4 c. butter
- 1 1/2 c. sugar
- 3 eggs
- 2 1/4 c. flour
- 1/4 tsp. salt
- 1/4 tsp. soda
- 3 c. milk (buttermilk)
- grated rind of 2 lemons
- 3/4 c. chopped pecans
Directions

1In large bowl, cream butter and sugar until light and fluffy. Add beaten eggs.

2Sift flour, salt and soda.

3Add alternately with buttermilk to creamed mixture.

4Beat well after each addition. Stir in rind.

5Bake in greased and floured 9 x 5-inch loaf pan. Bake 1 hour in a 325° oven or until toothpick test comes out clean.
