- red skinned potatoes (necessary for two)
- 1/4 c. diet margarine
- 1/4 c. lemon juice
- salt, lemon pepper and paprika
- parsley flakes
Directions

1Boil as many red skinned potatoes as necessary for 2 people. Drain when cooked.

2Place back in pan and cook with diet margarine and lemon until coated.

3Sprinkle with salt, lemon pepper, paprika and last, parsley flakes.
