- 1 cup sugar
- 2 tbsp. cornstarch
- 3 8 oz. pkgs. low fat cream cheese
- 3 eggs
- 3/4 cup light sour cream
- 1 tbsp. grated lemon peel
- 2 tbsp. lemon juice
- 1 jar lemon curd, light yellow
Directions

1Mix sugar and cornstarch, add cream cheese, beat until smooth.

2Beat in eggs, then stir in sour cream, lemon peel and juice.

3Put 3/4 cup into a small bowl, stir in 1/2 cup lemon curd. Pour 1/2 remaining filling into pan.

4Then pour on curd mixture and then remaining filling on top of that.

5Bake for 1 hour at 325 degrees.

6Cool on rack for 20 minutes.

7Spread with rest of lemon curd, chill and serve.
