- 1/2 c. butter or margarine, softened
- 5 eggs
- 1 c. milk
- 1 Tbsp. cornmeal
- 1 Tbsp. flour
- 1/4 c. lemon juice
- grated rind of 2 lemons
- 9-inch unbaked pie shell (deep)
Directions

1Beat together sugar and butter until fluffy.

2Add eggs and milk, beating well.

3Beat in flour, cornmeal, lemon juice and rind.

4Pour in pie shell and bake at 325° for 30 to 40 minutes until custard is set.
