- 2 c. sugar
- 1 Tbsp. cornmeal
- 1 Tbsp. flour
- 4 eggs, beaten
- 1/4 c. milk
- 1/4 c. melted butter
- 1/3 c. lemon juice
- 1 Tbsp. lemon rind zest
- 10-inch unbaked pie crust
Directions

1In large bowl, mix sugar, cornmeal and flour.

2Add beaten eggs and beat well into dry ingredients.

3Add milk, butter, lemon juice and grated lemon rind.

4Mix well.

5Pour into pie crust. Bake 350°

6for 40 - 45 minutes.

7Cool completely before cutting. Serves 6.
