- 3 whole chicken breasts, boned, skinned and halved
- 1 1/2 c. unbleached flour
- 1/4 c. butter
- 1 1/4 c. olive oil
- salt and pepper
- 4 Tbsp. chopped parsley
- 1/4 c. lemon juice
Directions

1Place each chicken breast between two sheets of plastic wrap and pound flat with a mallet.

2Put flour into a plastic bag and drop chicken in to coat.

3Melt butter and oil together in a large skillet.

4Cook each chicken piece 3 to 5 minutes per side until cooked through.

5Set aside.
