  • 1/2 c. shortening
  • 1 Tbsp. Sucaryl
  • 1 egg
  • 1 Tbsp. water
  • 1 Tbsp. lemon juice
  • 1 Tbsp. lemon peel
  • 1 tsp. vanilla
  • 1/2 c. dry shredded coconut
  • 2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt

Directions

    Cream shortening in a small mixer bowl on high speed.

    Add Sucaryl, egg, water, lemon juice, peel and vanilla.

    Beat until blended well.

    Mix in coconut.

    Sift dry ingredients together; add to creamed mixture, mixing thoroughly.

    Form dough into a roll 2 inches in diameter; wrap in wax paper and chill until firm.

    Cut into thin slices and bake on ungreased cookie sheet in oven at 400° for 10 to 15 minutes.
