- 1 egg yolk
- 1/3 c. sugar
- 1/4 tsp. grated lemon rind
- 3 Tbsp. lemon juice
- pinch of salt
- 1 egg white
- 1/3 c. water
- 1/3 c. nonfat dry milk
- 1/4 c. graham cracker crumbs
Directions

1Mix in a small bowl the egg yolk, sugar, lemon rind, lemon juice and salt.

2In a quart bowl, put egg white, water and nonfat dry milk; beat with a rotary beater at high speed, until the mixture stands in peaks.

3Gradually beat in the lemon mixture. Turn into a 1-quart ice tray.

4Sprinkle the graham cracker crumbs over the top; freeze without stirring, at the coldest temperature, until firm.

5Serves 4.
