  • 3 c. Ritz cracker crumbs
  • 1 stick oleo
  • 3 egg whites
  • 1 c. sugar
  • 2 large cans lemon pie filling
  • Cool Whip
  • nuts (if desired)

Directions

    Mix cracker crumbs and oleo together and press into a 9 x 13-inch pan.

    Beat egg whites, adding sugar.

    Spread over crumbs and bake 10 minutes at 400°.

    Spread lemon pie filling over top. Top with Cool Whip.

    Add nuts, if desired.

    Chill 4 to 5 hours. (Can use chocolate or any other pudding.)
