  • 2 c. sugar
  • 8 eggs
  • 16 oz. butter (not oleo)
  • 16 oz. candied cherries, chopped
  • 2 tsp. baking powder
  • 4 c. flour, divided
  • 1 c. brown sugar
  • 16 oz. pecans, chopped
  • 16 oz. candied pineapple, chopped
  • 2 oz. lemon extract

Directions

    Combine fruit with 1 cup flour and baking powder.

    In another bowl, cream butter with sugars.

    Add eggs, flour and lemon extract.

    Add fruit and flour mixture with chopped pecans.

    Fill a greased and floured tube pan 3/4 full.

    Bake 2 hours at 300°. Loaf pans may be used.
