Lemon Lace Pudding

  • 1 Tbsp. butter or margarine
  • grated rind and juice of 1 lemon
  • 1 c. milk
  • 3/4 c. sugar
  • 2 eggs
  • 3 Tbsp. flour

Directions

    Separate egg whites and yolks.

    Cream the butter or margarine with the sugar.
  3. 3
    Add grated rind and juice.
  4. 4
    Blend into the first mixture the egg yolks, flour and milk.

    Beat the 2 egg whites until stiff, but not dry.

    Fold into first mixture.

    Pour into ungreased casserole dish.

    Place dish into pan of hot water in a 350° oven and bake 35 to 45 minutes, until knife inserted in the center comes out clean.

    Remove from oven and cool before serving. Makes 4 to 6 servings.
