- 1 1/2 c. sugar
- 1/4 tsp. salt
- 3 egg yolks
- 1/2 c. cornstarch
- 1 1/2 c. hot water
- 1/3 c. fresh lemon juice
- 1 tsp. grated lemon rind
Directions

1Mix sugar, salt and cornstarch together in a saucepan.

2Add hot water, switch to hot until steaming; turn to low and cook until thick and clear.

3Stir constantly 6 minutes.

4Remove from heat and stir in 1/2 cup of this hot mixture into the egg yolks, stir this back into pan with the rest of hot mixture.

5Cook for 6 more minutes on warm, stirring constantly.

6Remove and add lemon juice and lemon rind.

7Cool, pour into cool baked pie shell and top with meringue.
