  • 2 oz. butter
  • 3 oz. fine diced onion
  • 3 oz. fine diced carrots
  • 2 oz. lemon zest (1 lemon)
  • 1 pt. long grain rice
  • 2 pt. chicken stock
  • 1/4 c. lemon juice

Directions

    Heat butter; saute onion and carrots.

    Add rice.

    Do not brown rice or vegetables.

    Add stock, juice and zest.

    Bring to a boil and simmer, covered, 18 to 20 minutes.
