- 2 1/2 c. canned chicken broth
- 1 garlic clove, slightly crushed
- 1 c. long grain rice
- 1 Tbsp. finely grated lemon zest (peel)
- 2 Tbsp. chopped fresh dill
- 2 Tbsp. butter
- freshly ground pepper
Directions

1Heat the broth and garlic in heavy saucepan to boiling.

2Stir in the rice; cover and simmer until liquid is absorbed (about 20 minutes).

3Remove from heat.

4Stir in lemon zest and let stand covered for five minutes.

5Remove garlic clove.

6Gently stir in dill and butter.

7Season to taste with pepper.

8Serve.
