  • 1 cup flour, all-purpose
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 large lemon
  • 1 cup sugar
  • 2 tablespoons flour, all-purpose
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 tablespoons powdered sugar to sprinkle on top

Directions

    Preheat oven to 325F (160C).. For base, in a small bowl combine flour, butter and sugar, mix until crumbly.

    Press into a greased 9-in.

    Bake 20 minutes or until lightly browned.

    For topping, zest 2 teaspoons rind from lemon.

    Juice 3 tablespoons lemon juice.

    Add to a bowl with sugar, 2 tablespoons flour, baking powder, salt and eggs.

    Mix until well blended.

    Pour topping mixture over base.

    Bake 20 to 25 minutes or until nearly set.

    Cool in the pan on a wire rack.

    Sprinkle with icing sugar and cut into squares.
