  • 12 cup butter, softened
  • 14 cup icing sugar, sifted
  • 12 teaspoon salt
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 12 teaspoons grated lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons icing sugar

    Preheat oven to 350F.

    Lightly grease an 8-inch square cake pan.

    Beat butter and confectioner's sugar until smooth and creamy.

    Beat in salt, then gradually blend in flour until a soft dough forms.

    Press evenly into prepared pan.

    Bake in preheated oven for 20 minutes or until lightly browned.

    Place pan on a rack to cool slightly.

    In a bown mix together eggs, sugar, remaining 2 tbsp flour, zest and juice until blended.

    Spoon evenly over warm base.

    Bake 20 to 25 minutes longer.

    Remove from oven and sift confectioner's sugar over top.

    Place pan on a rack to cool completely, then cut into squares.
