  • 2 teaspoons oil
  • 1 onion chopped
  • 2 stalks celery diced
  • 1 large carrot diced
  • 2 cloves garlic minced
  • 1 teaspoon curry powder
  • 13 1/2 ounces diced tomatoes
  • 1/2 cup vegetable stock
  • 7 ounces red lentils cooked, drained
  • 4 sheets frozen puff pastry thawed, each cut into 4 squares
  • 3 1/2 ounces cheddar cheese grated
  • 1 egg lightly beaten
  • salad to serve

Directions

    Preheat oven to 400°F. Line 2 baking trays with parchment paper.

    Heat oil in a frying pan over high heat. Saute onion for 2-3 mins, until tender. Add celery, carrot and garlic. Cook for 1-2 mins. Add curry powder and cook, stirring, for 1 min, until fragrant. Add tomatoes and vegetable stock. Simmer for 10 mins, or until vegetables are tender. Add lentils and let cool.

    Divide lentil mixture and cheese between squares. Fold over to form triangles, pressing edges together to enclose filling. Arrange on prepared trays and brush with egg. Bake for 25-30 mins, until puffed and golden brown. Serve with salad.
