- 2 cups water

1Put the lentils in a small pot with the water, bring to a boil, and cook until tender, adding a little more water, if necessary.

2That could take anywhere from 25 to 35 minutes.

3If all the water hasnt been absorbed by the time the lentils are cooked, drain it off.

4Season the lentils with salt to taste.

5For an Indian accent, add to a pot of 1/2 cup lentils and 1 cup water: 1/8 cinnamon stick, 1/4 bay leaf, 1 peeled garlic clove, 1 thin slice peeled ginger, a pinch of turmeric, and salt and pepper.

6Top with a small sprinkling of toasted cumin.

7This is good with rice.
