Leon'S Vegetable Casserole

Ingredients

  • 1 pkg. Uncle Ben's quick cooking long grain and wild rice
  • 1/2 c. each, cut up: red cabbage, yellow squash, carrots, zucchini, cauliflower, broccoli and mushrooms
  • 1/3 c. white wine
  • 1/3 c. water
  • 2 Tbsp. soy sauce
  • 2 Tbsp. margarine or butter
  • 1 c. sour cream
  • 1 c. grated Cheddar cheese
  • 3/4 c. cashew nuts, broken

Directions

    Cook rice according to directions.

    Put in bottom of large casserole dish.

    Saute vegetables in butter to coat.

    Add wine, soy sauce and water; cover and cook over low heat 15 minutes.

    Use slotted spoon to transfer vegetables to casserole dish over top of rice.

    I add a small amount of the liquid.

    Spread sour cream on top of vegetables.

    Sprinkle Cheddar cheese on top of sour cream. Then top with cashews.

    Place under broiler until cheese melts. Serves 5 to 6 as a main dish or 8 to 10 as a side dish.
