Lettuce Quinoa Rolls

- 3/4 cup quinoa
- 1/4 cup tahini
- 2 Tbs. lemon juice
- 12 large butter leaves
- Mint sprigs
Directions

1Combine quinoa and 1/12 cups water in medium saucepan.

2Cover, and bring to a boil.

3Reduce heat, and simmer 15 to 20 minutes, or until water is absorbed.

4Transfer quinoa to bowl, fluff with fork and refrigerate 20 minutes.

5Stir in tahini and lemon juice, and season to taste with salt and pepper.

6Divide quinoa mixture into 12 portions.

7Using your hands, roll mixture into short, fat cigar shapes.

8To make wraps, place 1 portion onto each lettuc leave, and add a few mint springs.

9Fold sides over filling, and roll up.

10Serve chilled or at room temperature.
