Light Linguine Carbonara

  • 8 ounces linguine, uncooked
  • 1 egg, lightly beaten
  • 1 cup fat-free evaporated milk
  • 14 cup red pepper, finely chopped
  • 18 teaspoon crushed red pepper flakes
  • 18 teaspoon pepper
  • 12 cup parmesan cheese, grated (divided)
  • 12 cup frozen peas, thawed
  • 2 slices bacon, cooked and crumbled

Directions

    Cook linguine according to directions.

    Meanwhile, in a small saucepan, combine the next 5 ingredients.

    Cook and stir over medium-low heat until mixture reaches 160 degrees and coats the back of a metal spoon.

    Stir in 1/4 cup of the parmesan cheese, the peas and the bacon; heat through.

    Drain linguine; toss with sauce.

    Sprinkle with the remaining parmesan cheese.

    Serve immediately.
