Ingredients

  • 2 c. dried lima beans
  • 1/2 lb. pork sausage, cut into 1/2-inch pieces
  • 1 onion, chopped
  • 1/2 green pepper, chopped fine
  • 1/2 c. chopped celery
  • 1 1/4 c. tomato juice
  • 2 Tbsp. brown sugar
  • salt
  • 1 tsp. chili powder
  • 1/8 tsp. cayenne pepper

Directions

    Soak beans overnight.

    Brown sausage and remove.

    Drain pot and saute onion, green pepper and celery.

    Put all ingredients into pressure cooker and cook for 25 minutes.

    Let pressure drop on its own.
