  • 6 whole chicken breasts, split, skinned and boned
  • 1 clove garlic
  • 7 Tbsp. butter, divided
  • 1/4 c. lime juice
  • 2 minced scallions
  • 1 tsp. tarragon
  • 1 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • 1/2 c. white wine or Vermouth
  • 1 honey dew or cantaloupe, cut in 12 pieces
  • lime wedges (garnish)
  • mint leaves (garnish)

Directions

    Rub cut garlic on chicken and place in 2 well-buttered 13 1/2 x 8 1/2 x 1 3/4-inch baking dishes.

    Sprinkle lime juice, scallions, tarragon, salt and pepper over chicken.

    Dot with 7 tablespoons butter.

    Add wine.

    Bake, uncovered, at 375°, basting every 10 minutes.
