- 7 lb. cucumbers, cut crosswise
- 2 c. lime
- 2 gal. water
- 2 qt. vinegar
- 8 c. water
- 1 Tbsp. salt
- pickling spice
Directions

1Mix raw cucumbers in lime and first 2 gallons of water.

2Soak for 24 hours; then rinse 3 times.

3Soak 3 additional hours in ice and water.

4Remove carefully and drain.

5Make the syrup.

6Stir remaining ingredients together until dissolved.

7Pour over cucumbers.

8Let stand 3 or 4 hours (or overnight).

9Add pickling spice to taste.

10Boil 35 minutes and fill jars with cucumbers and syrup.

11Leave 1/2-inch headspace and seal jars.
