- 2 farm fresh eggs
- 2 slices of crisp smoked bacon
- 2 slices of Vermont cheddar cheese
- 3 ounces caramelized onions
- 2 slices of brioche
- 4 ounces hash brown potatoes
- 2 ounces Sriracha Mayo
- 1 leaf of lettuce
- 2 slices of tomato
Directions

1Cook your hash browns in a pan until they are cooked through and reach a perfect golden brown.

2Toast or grill the brioche until it is lightly browned.

3Spread both slices of brioche with the Sriracha Mayo.

4Prepare the eggs to your liking. Chef Eddie recommends over easy (his personal favorite)!

5Melt the cheddar cheese on top of your eggs for one minute.

6Build your sandwich, cut in half and enjoy!
